That's not me saying, this feedback came from my kid's friends who hogged onto my Black Rice Khoya Kheer, a colorful and tasty variant of my otherwise creamy Rice Kheer.
Recipe - Black Rice Khoya Kheer

Ingredients
1 cup Earthaholic Black Rice
5 cups milk
12 tbsp brown sugar / jaggery / white sugar
½ cup khoya
Ghee 1 tbsp
Cashews, almonds, and raisins Or dry fruits of your choice
Step 1: Prep up
Wash and Soak the Earthaholic Black Rice for 4-5 hrs
Drain the water from the rice and keep it aside
Step 2: Get Started
In a Pan, add ghee and roast the Dry Fruits till they turn golden
Take out the roasted dry fruits and in the remaining ghee roast Khoya till it starts separating from the ghee
Now add the drained Earthaholic Black Rice to the khoya and sauté for a couple of minutes.
Add Milk and Brown Sugar to it and let it come to a slow boil. Reduce the heat to the medium-low and let it cook till the milk is reduced to half the quantity.
When cooked, take the black rice kheer off the heat
Add Cardamom Powder and mix well
Garnish the kheer with Roasted Nuts, you can serve the kheer Hot or Chilled
Tips
You can adjust the thickness of the kheer as per your choice. If you like your Kheer. thicker, reduce the milk as per desired consistency. Add more milk if you like it thinner as the black rice is expected to require more water for cooking.
Preferably take a heavy bottom pan as kheer may stick to the bottom and burn.
Keep stirring the kheer every couple of minutes, khoya may stick to the bottom.
You can skip adding sugar at the beginning. Once the kheer is cooked, take it off the heat and then add jaggery/ sugar with the cardamom powder.
The rice does not become mushy like regular white rice when cooked, it stays firm on the outside and soft on the inside.
